Rabbit in the Spring Grass 2010

Before the cats came to live with us here at the farm we used to get baby rabbits coming around the house. I used to go outside and sit watching them play in the grass. They were so innocent the little bunnies used to hop right up to me and sit there. Different situation now of course. The cats have cleaned out the rabbits - not that I'm upset about it. Rabbits here in New Zealand are considered a serious pest and cause all kinds of damage. One rabbit seen usually means a lot more will be close by. I eat rabbit sorry to say but they taste very nice if cooked the right way. It's been a while since I've had rabbit for dinner - of course my girls would never let me have it here - then again..

Rabbit or Pheasant Stew (Slow Cooker)

Ingredients:

  • 1 or 2 rabbits or pheasants
  • Salt, pepper and paprika to taste
  • 1 c. sour cream
  • 1 c. cream of mushroom soup
  • 1/4 tsp. Worcestershire sauce
  • 2 tbsp. instant onions

Preparation:

Season cut up meat. Mix sour cream, soup and Worcestershire sauce. Add instant onions. Cook in slow cooker on low for 8 hours.

I actually did this with Lamb would you believe. It was just as nice - no rabbit to put in my slow cooker so I used an alternative.

Meantime..it's raining here. Good. I suppose beats a six month long drought any day. Hopefully we won't have a repeat performance like last Spring/Summer seasons.

  1. Rabbit's not bad. Slightly gamey taste (not as much as venison). So yes -- I have partaken of Bugs' cuzzies, and found them tasty.

  2. We haven't had rabbit for ages. Last recipe I tried was the Jamie Oliver 'Essex fried rabbit' which is a really good way of eating it.
    Have seen a bunny about here recently, but it just keeps getting away!

  3. Been years since I et 'underground mutton' but it's a tasty dish when cooked slow ;)
    Hope you get the soaking rains we've been copping in Oz the past few months xxx
